Green Chile Pork Carnitas
Latin-inspired original recipe. Slow-cooked and shredded pork roast with green pepper and roasted poblano chiles, topped with smoked poblano crema and pico de gallo. Served with flour tortillas and beans.
Nachos with Poblano Chile Queso with Chicken or Chorizo
Poblano chile queso with chicken or spicy organic beef chorizo in the middle, loaded with pinto beans, pico de gallo, and poblano crema on top (with multi-layers of chips and shredded melted cheese, of course). Wow!
A fresh take on a Southwest favorite. Bacon-wrapped all-beef dogs, on our baked-on-the-truck from scratch buns, loaded with pinto beans, tomato, onion, our own salsa verde, and a touch of mustard and mayo.
Rolled Chicken Tacos
Grilled Fresh Salmon Salad
Fresh salmon with grilled red bell peppers & red onions on a bed of fresh spring mix greens, with truck-made roasted tomato basil vinaigrette. Served with fresh truck-made Italian bread with goat cheese.
Spinach Salad with Grilled Chicken
Grilled chicken on a salad of organic baby spinach with aged Vermont cheddar, red onion, spiced candy pecans and citrus vinaigrette.
Roasted Vegetable Enchilada
Oven-roasted on the truck fresh vegetables, with fresh enchilada sauce, wrapped in corn tortillas and topped with fresh poblano crema and pico de gallo.
American-Latin fusion. Grilled 1/3 pound organic beef burgers, topped with poblano chile queso, fresh pico de gallo, tortilla crisps, and served on our fresh truck-baked bun. Shown with fresh, truck-made sweet-potato chips.
Traditional. Served with hashbrowns.

Dry-aged steak, blue cheese sauce, caramelized onions & herbs, with truck-made chips.
Maine Lobster Tostada
Fresh truck-cooked Maine lobster, quickly sautéed with a corn & lobster coulis, served on a crisp tortilla, layered with fennel & Napa cabbage slaw & beans, and topped with roasted corn, shaved red onion & bell pepper. Yum!
